Industrial Kitchen Layout Planning: Designing an Efficient Workflow

The most common mistake in a new restaurant or hotel kitchen project is drawing up the equipment list before the floor plan. The right order is the other way around: workflow and layout come first, and equipment selection follows from that plan. Here are the four things worth getting right when designing an industrial kitchen's layout.

Why Layout Comes Before Equipment Selection

A kitchen layout plan prevents equipment from being ordered before the space is measured down to the centimeter. Structural columns, utility points (water, gas, electricity, drainage) and ceiling height need to be established first, and equipment dimensions chosen to fit those constraints afterward. Do it the other way - buy the equipment, then try to fit a layout around it - and the common outcome is a hood colliding with a column, or an aisle left narrower than code allows.

Zone Planning Based on Workflow Logic

An efficient kitchen moves material from delivery to plate in one direction, without backtracking: receiving, storage, prep, cooking, plating and dishwashing should each follow the last, never loop back. Station-based planning - hot kitchen, cold kitchen, bakery-pastry, dishwashing as distinct but adjoining sections - lets staff work during peak service without constantly crossing each other's path. This zoning also lines up directly with the clean/dirty separation HACCP requires.

Equipment Spacing, Aisle Widths and Staff Traffic

The working aisle between two rows of equipment needs to be at least 120-150 cm so staff can move safely even with their back turned; high-traffic pinch points should be widened to 180 cm. Distance between the cooking line and the service pass should be minimized to cut plate-carrying time, while staying far enough from heat and steam. Ignore ergonomics and a kitchen can be technically complete on paper and still be slow and exhausting to work in.

Infrastructure: Planning Ventilation, Electrical and Utility Lines Early

Hood ducting, electrical panels, gas lines and floor drains routinely clash when the architectural drawings and the kitchen equipment plan aren't developed together. That's why the layout needs to be locked down alongside the architectural and structural plans, before construction or renovation begins. A duct opened up after the fact, or a hood line moved mid-build, drives up both cost and schedule.
