Cold Room Design and Capacity Sizing for Industrial Kitchens

In an industrial kitchen, the cold room isn't just storage — it's one of the foundations of food safety and operating efficiency. An undersized or poorly insulated cold room drives up your energy bill and lets product spoil, which turns into real financial losses fast. Here are the technical points that actually matter when designing one.

Panel Thickness and Insulation Selection

Cold room panels are typically PIR (polyisocyanurate) or PUR (polyurethane) foam-filled sandwich panels; a chiller room running at +2/+4°C usually needs 60-80mm panel thickness, while a freezer room at -18°C or below needs 100-150mm. Undersized panel thickness forces the compressor to run continuously, which both raises energy consumption and shortens the unit's service life. Always choose panels with a low U-value (heat transfer coefficient).

How to Calculate the Right Capacity

Compressor and evaporator capacity is calculated in kcal/hour based on room volume, target internal temperature, daily product turnover, door-opening frequency and ambient temperature. An undersized system either never reaches the target temperature or takes far too long to get there, which can push you outside HACCP critical control limits. Capacity sizing needs to happen at the planning stage, together with your equipment supplier.

Flooring, Door and Accessory Selection

Cold room flooring needs to be load-bearing enough for the product weight and insulated with a vapor barrier against moisture ingress; without underfloor heating cable, a freezer room's floor can heave and crack from frost. Hinged doors work fine for smaller rooms, while sliding rail doors suit high-traffic rooms with frequent entry and exit; a PVC strip curtain in front of the door noticeably cuts cold air loss.

Don't Skip Energy Efficiency and Maintenance

An automatic defrost cycle keeps frost buildup on the evaporator from killing cooling efficiency and should be scheduled to run at regular intervals. Keeping the condenser unit free of dust and grease, checking door gaskets periodically, and keeping the temperature alarm system operational all lower energy consumption and prevent product loss if something fails.
