How to Design Flooring and Drainage for Industrial Kitchens

Flooring and drainage are among the most overlooked details in an industrial kitchen — and among the most expensive to fix after the fact. A floor with the wrong slope or a drainage system with insufficient capacity shows its true cost within a few months: standing water, slip accidents, and failed hygiene inspections.

Getting the Floor Slope Right

Industrial kitchen floors should be built with a minimum slope of 1.5-2% toward the drains, roughly a 1:50 fall. That slope needs to run continuously from the wettest points — the dish station, under the grills, along the cooking line — all the way to the drain; any flat or reverse-pitched section becomes a pool of standing water, an ideal environment for bacteria to grow.

Choosing a Slip-Resistant Floor Finish

Under the DIN 51130 standard, floor coverings rated R10 to R12 should be treated as mandatory for wet, greasy kitchen floors; areas with heavy grease splash, such as the cooking line, call for R11 or R12. Seamless epoxy resin coatings resist bacterial buildup and hold up well against chemical cleaners, while vitrified granite tile is often chosen where heavy equipment needs strong impact resistance.

Drain Channel Type and Spacing

Trench drains — stainless steel channel drains with a grate running the length of the cooking or dishwashing line — outperform isolated point drains, because they collect water across a wider area instead of relying on it reaching a single spot. Trench drains are typically spaced every 4-6 meters, sized to a 100-150mm outlet based on hourly flow calculations, and pitched to connect cleanly into the grease trap line.

Wall-Floor Junctions and HACCP-Compliant Detailing

Sharp 90-degree corners where floor meets wall should be replaced with curved coving profiles that are easier to clean and don't trap dirt — one of the details HACCP auditors check most often. Every junction should be sealed watertight, and a sub-floor membrane adds a second line of defense against leaks into the structure below.
