Dry chemical powder knocks down the visible flame but does nothing to cool the oil underneath it, so the fire can flash back — and the pressure of the discharge can even scatter burning grease. A wet chemical agent, based on potassium acetate or potassium carbonate, reacts with hot cooking oil through saponification, forming a soapy foam blanket that smothers the flame while cooling the oil below its ignition point at the same time. That's why wet chemical has become the standard for protecting fryers, griddles and hood lines worldwide.
Nozzle Placement and Coverage Calculations
Every piece of cooking equipment — the fryer, griddle, chicken rotisserie, hood plenum and duct — counts as its own hazard zone and needs its own nozzle, sized and aimed according to the manufacturer's UL-listed coverage data. Kitchens change over time: new equipment gets added, existing units get moved, and the system can't stay compliant unless coverage is recalculated every time the layout shifts. This is one of the most commonly missed steps and one inspectors flag most often.
Gas and Electrical Shutoff Integration Is Non-Negotiable
The moment the system discharges, a mechanical or electric shutoff valve must automatically cut gas and/or power to the protected appliance — otherwise the burner keeps running under the foam blanket and the fire can reignite the second it clears. The system also needs to tie into the building's fire alarm panel and a manual pull station near the exit, so it can be triggered automatically or by hand.
Never Skip Periodic Inspection and Recharge
A certified technician should check the cylinders' pressure, the hose lines and the fusible links at least every six months, and each inspection needs a dated tag left on the system. Insurers and fire inspectors ask for these records — a system with no maintenance history, or one past its inspection date, puts the business at risk on both the license and the insurance side, even if it would technically still fire in an emergency.
